Sherrie-Mae’s Chicken, Bacon, Brown Butter Sacchetti: A Giveaway

My life is busy. I don’t wear ‘busy’ as a badge of honour, it is just the way our lives have evolved. Our children, pets, home, farm and careers take a lion’s share of our day. Once in a while my husband and I stop and reconnect.

My husband loves nothing more than being at the cottage, sitting on the dock and enjoying the silence, but in the middle of winter that is impossible. I asked my best friend to take the kids for a couple of hours while I prepared a simple, healthy meal, with our favourite ingredients. I found a recipe on Appehtite.ca and decided to modify it to suit our tastes.

Sherrie-Mae’s Chicken & Bacon Brown Butter Sacchetti

1 600g package of Olivieri Chicken & Bacon Sacchetti

6 slices Maple Leaf pre cooked bacon (chopped)

1 medium sized orange bell pepper

1/3 cup of unsalted butter

pinch of sea salt

dash of roasted garlic powder 4re4

sprigs of fresh cilantro

1/2 cup shredded mozzarella

The fresh Olivieri Sacchetti pasta took only three minutes to prepare. I browned the butter, cooked bacon and slices of orange bell pepper in a large saute pan for 4 minutes, just until the peppers began to soften. I drained the pasta and tossed 1/2 of the cooked pasta into the the saute pan. Gently, with a wooden spoon I sautéed the pasta with the brown butter mixture. I then sprinkled roasted garlic powder and sea salt over the pasta while maintain a low heat for 2 minutes. I finished the dish with a sprig of cilantro and shredded mozzarella. In less than 15 minutes I created a romantic dinner with my husband.

We enjoyed the dish sitting by the fire place warming our feet and reconnecting.
